Stretch one meal into two

I like to roast a chicken and then use what I don't eat of the chicken to make a chicken soup.

Another thing I'll do is make a lentil soup, eating for dinner one night with a salad and then mix the lentils with pasta for dinner another night.

There are so many things you can do like this. Add peas to leftover rice from take-out, use the extra pasta you get from an entree and mix it with sauteed vegetables or clam sauce, use leftover veggies to make an omelette or quiche.
