When I graduated from college (granted, more than a few years ago!), I went on a Contiki tour through Italy. It was absolutely one of the best experiences of my life. A few years after, I took another one through France and England. It is so worth it!

I don't know if it caters to students, but I just heard about a cool new web site that specializes in tours for the younger crowd (18 to 34). The packages I've looked at seem like a perfect blend of partying, tours and education and relaxation.
