What do you make with Thanksgiving leftovers?
One of the great things about Thanksgiving dinner is that it's the meal that keeps on giving! But after you've had turkey for 2 days straight, you can get bored and even end up throwing away food. Don't do that!!!
Do you have any good recipes for turning leftovers into something else? I read something about mashed potatoes mixed with bread crumbs and a few other ingredients and then pan-fried.
OK, this is a little old by now, but I just had to share that I discovered that the cream cheese filling/icing that goes in pumpkin rolls is sooo good as a topping on sweet potato casserole! (It's also good on pumpkin pie, but that one's more obvious.)
I've heard that, making potato pancakes out of mashed potatoes. You can also make a turkey casserole with the extra meat, some egg noodles, cream of mushroom and some cheese. There's a restaurant I saw on Food Network or Travel Channel that makes thanksgiving sandwiches...literally piling turkey, stuffing, sweet potatoes and cranberry sauce on bread.
Or you could make like Paula Deen and just melt some butter over all of it, mix it up and call it thanksgiving leftover surprise....gotta love Paula Deen.
