My husband and I are currently getting by on one car. Our biggest problem is during the week, so I guess our situations are a little different, but I do have some tips that help us.

If I know that I will have errands to run on a particular day that he will use the car for something else, I try to get up early and get it done as soon as possible. My husband is not a morning person, and usually likes to sleep in on the weekends anyway. This is especially good for grocery shopping, because most grocery stores are open fairly early in the morning anyway. So, if you are an early bird, and he is a night owl, (or vice versa) you might find there is not much of a conflict.

The other tip I have is that you have to be somewhat prepared and organized. It is kind of annoying not to be able to run out and get something last minute- so you have to work extra hard to make sure you have all of your necessities on hand and not run out. I try to plan all of my errands a few days ahead of time, so that I can make sure I have a comprehensive list of errands. Once I know all of the things that I have to do, I block out the time on his and my calender as a time that I NEED the car. He does the same for me. Planning and forethought gives us a chance to work around each other's schedules.
